I don't know about you, but I love tacos. It's hard to imagine celebrating Cinco de Mayo (or spending most weekends) without tacos. It can be discouraging when you see that most seasonings and sauces you purchase contain dairy. It is very easy to make your own taco seasoning.
Now the issue of the filler. Of course beef tacos are everyone's favorite. However, I have discovered a combination that tastes just as good (if not better) and is significantly more nutritious. I know what you are thinking: a healthy taco? That sounds impossible. It's not though.
What you need:
1/4 onion (any variety), chopped
1/4 C. shredded vegan cheddar
1/4 C. thinly sliced peppers (any variety)
1/2 avacado, thinly sliced
1/4 C. sprouts (alfalfa or broccoli)
1/4 C. salsa (or make your own)
1/4 can black beans
1 package Alfalfa Crumbles (found in the frozen vegan section in your local grocery store)
Taco Seasoning
Your choice of taco shell
Heat oil in a skillet over medium heat. When oil is hot add onion and sauté until fragrant, approximately one minute.
Add peppers to the skillet and allow to cook for an additional 30 seconds. Then add the black beans and Alfalfa Crumbles. Allow to cook for about three minutes, stirring frequently.
Combine the taco seasoning and 1/2 C. water with the combination in the skillet and cook, stirring frequently, until the water is absorbed.
Fill your desired taco shell with the "meat" combo, top with cheese, avacado, sprouts, and salsa.
You can also try using other meat alternatives and toppings. I use the alfalfa crumbles because they are pre-crumbled and have excellent taste in comparison to some other varieties.
