This time of the year is filled with cook outs. Many of the sides contain dairy products and meats, so we will be focusing on some things you can make which do not.
A favorite of mine is the Vegan Greek Bean Salad. It is my own recipe and I could eat it every single day. You may want to change the amount that you make based on the number of people you are entertaining. Or, if you are like me, just make a large batch and pack it for lunch at work.
Ingredients
Garbanzo beans
Black beans
Cucumber
Avocado
Red onion
Colored bell peppers
Olive oil
Garlic powder
Sunflower seeds
Combine the two different types of beans into a bowl large enough to hold all ingredients.
Dice the cucumber, avocado, onion, and peppers. Add the vegetables to the bowl with the beans.
Cover in olive oil and toss until combined.
Season as preferred with garlic powder.
Top with sunflower seeds when you are ready to serve/eat the salad.
