When you get up early and have to rush to get out the door, the last thing you want to think about is cooking breakfast. With this quick and easy recipe you can skip the drive through (it's really difficult to find vegan options on-the-go anyway). Plus, this option tastes way better than fast food.
I literally bake this in the oven while I shower in the morning, and the prep work is minimal. In the time it takes to brew my pot of coffee in the morning, the oven preheats and is ready to bake these delicious sandwiches.
You do not have to use Morningstar sausage, but I do because it takes as much time to prepare as toasting the bagels, which makes it an easy clean up because you can make it on one sheet. It also means you do not have to make multiple trips to your kitchen, because time in the morning is extra precious.
Ingredients:
Vegan cream cheese (Daiya is my preference)
Broccoli sprouts (or any toppings you prefer)
Mini bagels
Morningstar breakfast sausage
Vegan butter
Preheat oven to 375D. While the oven is heating place sausage on baking sheet. Butter each side of the bagel, and place on baking sheet.
Place sheet in the oven and bake for 11 minutes.
Top one half of bagel with cream cheese and sprouts or your preferred topping(s) and place sausage patty on the other half.
Quick, no hassle breakfast sandwich you can eat at home or on the run. I make two because of the small size of the sandwich and the low calorie content of the ingredients.
