I store my vegetable scraps in a bag and keep it in the freezer until I am ready to make broth, because there are no preservatives it will need to be used up within a week of making it. Or, if you prefer, you can make the broth ahead of time and keep that in your freezer instead.
The only things you need to make vegetable broth are vegetable scraps and water. Plus, the vegetable scraps can be placed into your compost pile after you use them to create the broth.
Some of the vegetables to use the scraps from include: carrots, celery, onion, corn, tomatoes, mushrooms, and leeks. Adding herbs will increase the flavor of your broth. Good herbs to use are bay leaves, thyme, and parsley.
In order to make your vegetable broth, place your vegetable scraps in a pot, cover with water, and simmer for approximately one hour. After an hour strain the broth into a separate container and place the vegetables in your compost pile. The broth will last for about a week in the refrigerator, or you can freeze it to extend it's life.
