I know it may seem hard to believe, but it actually is possible to make vegan grilled cheese which you won't even know is vegan. That is right, a melty, cheesy, delicious grilled cheese sandwich with no dairy.
There have been a lot of chilly rainy days lately. My favorite comfort food for days like this is grilled cheese and tomato soup. It is still possible to enjoy these while maintaining a vegan diet.
This took some experimentation for me. Vegan cheeses do not melt the same way the dairy varieties do. However, it is still possible to make a melty, delicious grilled cheese sandwich with non-dairy cheese. If you sign up for Ibotta using my invite code (ykfintq), we both receive $10. I recommend using Follow Your Heart - Smoked Gouda nondairy cheese for your sandwich. It melts well and tastes amazing, you will forget it isn't made from dairy.
Now comes the creative portion of making unique and delicious grilled cheese. I used to love eating Dill Havarti, and I think it was a great accent to any foods I would prepare with cheese. Since I can no longer use this cheese, I use some dill from my fresh herb garden and sprinkle it between two slices of cheese so that it melts in the middle of the sandwich and provides a rich flavor. Of course, you can't have grilled cheese without tomato soup. I always use traditional Campbell's soup (which currently has a rebate on Ibotta), almond milk to make it extra creamy (you are almost always guaranteed to have a rebate on non-dairy milks found in Ibotta), and fresh basil from my herb garden.
Using the fresh seasonings in the cooking creates a unique flavor experience which is unbeatable. Plus, knowing that you are eating something that you grew adds a feeling of accomplishment.
